Just smile and eat


When life squeezes me to the last drop, blurs my eyes with water
 All I need is a bowl of Miến xào cua...

RECIPE

300g crab meat (boiled)
200g dried mung bean thread
1 big onion, sliced
Chilies, chopped in thin strips
Coriander and scallion for garnishing
5 garlic cloves, chopped
Salt and pepper
Soy sauce
1/2 tbsp. fish sauce
A lime
1 tsp Sugar
Vegetable oil


1.Make the garlic soy sauce (I already posted) but replace white wine vinegar with lime juice to get some of the crab smell off. Set aside

2. Stir fry onion slices, add a little bit of salt and pepper. Set aside

3. For the mung bean threads
Boil 200g mung bean threads, follow instruction on the its pack. Drain and then mix well with the stir-fried onions and garlic soy sauce

4. For the crab meats
In a hot, heavy-bottomed pan, heat 1 tbsp. vegetable oil. Add 1 tbsp chopped garlic and 1/2 tbsp chopped chilies, stir fry until they starts to smell. Add crab meats and gently stir for 2 minutes. Season with 1/2 tbsp light fish sauce and 1/2 tsp sugar, freshly grounded black pepper. The hot smell of chilies, garlic, pepper will eliminate the strong crab smell but not completely destroy its taste, if you don't over stir fry chilies

5. Mix the stir-fried crab meats with mung bean threads very gently and plate up. Garnish with coriander, scallion swirls...

I'd love to have a bowl of mushroom soup made out of different kinds of mushroom and chicken stock. Seasoning. Of course, lightly with salt and pepper
